A quick drive-by posting, since I'm going into the final season of AoS without a clue...
The Disney Gallery: Star Wars: The Manalorian has the first four episodes up. If you're into behind the scenes stuff, this is fascinating material. It obviously spoils the heck out of the series, so be warned... Heh...
It covers how The Mandalorian was made. The first four eps are "Directing" (a roundtable discussion with the directors), "Legacy" (the philosophy of the show and its direction), "Cast" (the three main cast members that weren't killed off), and the latest, "Technology".
If you want to know why Jon Favreau and Dave Filoni need to run Star Wars, it's in the second episode.
Technology, is about how the show is made. It is becoming less special effects, and more real-time filming. Much of what you see onscreen in the Mandalorian, is rendered in real-time on LED screens using the Unreal engine. There is little green screen or other post-production effects.
It's pretty amazing stuff.
Also coincidentally, the boys: the sherman brothers' story became available today on Disney+. If you don't recognize the name, think Mary Poppins, Jungle Book, The Tiki Room and It's A Small World (after all). It's a must see doc produced by their sons. Unfortunately, D+ hasn't put up the extras that were on the DVD. Some of that content was great...

Final episode 108 came out today. "Connections", where they discuss where many of the ideas for props and imagery came from. They actually used the 501st Legion as a source for Stormtroopers. They had no idea they were going to be in the Mandalorian until the day they arrived on set. How cool would that be?
This was a fantastic behind the scenes look at how the series was put together. Man, I'd like to see one for AoS... :-D
