I feel like we may have broached this subject before but I can't remember what the end result was.
Why didn't Coulson start carving after seeing the alien writing in "Eye Spy"?
Was it because he hadn't had the knowledge about TAHITI that he had later?

Yeah, pretty sure you just answered your own question. The fake TAHITI memories were too firmly embedded at that point to let Coulson's urge to carve be triggered by him seeing the writing. In that regard Fury had been absolutely right; it WAS important that Coulson didn't know what had happened to him, because as soon as he did and came in contact with something that woke up the alien DNA in him, boom, new wall decorations!

It has been a while since I saw "Eye Spy," but did Coulson see the writing? My memory has the woman then known as Skye being the one monitoring Ward's feed while Coulson chased the handler. I admit that, even if Coulson did not see the writing during the episode, it would make sense that at some point he would want to see what Akela Amador was sent to find and would have been exposed.
Knowledge about T.A.H.I.T.I. could play a role, but were Sebastian Derik, Hank Thompson, and Janice Robbins from "The Writing on the Wall" any less ignorant about T.A.H.I.T.I.? I think that Derik knew that something happened, but I do not remember the other two knowing anything.
If I were to take a guess, the obsessive carving does not start immediately after the treatment. The test subjects in "The Writing on the Wall" were fine at first and only started carving later. It could be mere coincidence that Coulson started carving after seeing Garrett's carving and that Coulson would have carved anyway. I think that Garrett is the only one who started carving right away. This might be because he did not receive GH-325, but a substitute that Raina synthesized from older samples that Garrett snatched from the guesthouse.

Garrett and Coulson were both special cases because while Garrett got a different version of GH. 325 and Coulson was the only one who was *dead* upon injection.
